The West Arsi Zone is not one of Ethiopia’s most prominent coffee-growing regions and was long classified as Sidama coffee, a much better-known neighbouring region. West Arsi is now increasingly recognised as a distinct origin, partly because of districts such as Nensebo, which have been producing outstanding coffees for years.
Like the Gara Kogne Washing Station, the Aash Washing Station is part of Faysel Yonis’s family business. As is common in Ethiopia, the coffee cherries are not grown on large farms, but by hundreds of smallholders around the town of Werka. The smallholders deliver their cherries to the Aash Washing Station, where they are naturally processed.
Suitable both for preparation as filter coffee and as espresso in a flat white or cappuccino.
