A co-fermented coffee from Henry Bonilla. These coffee cherries are fermented with cinnamon sticks in airtight containers at Finca Arrayan.
The additional microorganisms cause the fermentation to develop very differently from a conventional process, while the cinnamon sticks’ intense aroma noticeably works its way into the green coffee.
Co-fermented coffees have a noticeably more intense and distinct aroma and flavour than conventionally fermented coffees. All of this happens naturally, without artificial flavouring. Co-fermented coffee is not infused coffee!
